Bikers, runners, and walkers are smelling delicious food being smoked outside in a Big Green Egg, coming from Blue Bike Bistro. The new bistro is owned by Josh McCorsley and Savannah McGinnis. It is located inside Tanner Health System’s new Health Pavilion on Dixie Street. Tanner’s Health Pavilion is a 130,000 square-foot, $35- million facility and was designed with a focus on wellness, greenspace around the facility, and a trailhead to the Carrollton Greenbelt.
Executive chef, Josh McCorsley says, “Blue Bike Bistro is a totally different concept from my other restaurant, Lulu’s. The opportunity was presented by Tanner, to have a bistro centered around the Greenbelt.”
The bistro uses the Big Green Egg to smoke turkey breast daily and hamburgers on Fridays and uses a host of locally-sourced products including H&F breads and farm-to-table vegetables from Neels Gap, which is based in the north Georgia mountains. Josh shares, “There are no hormones in our non-processed meats; they all come in raw, never frozen.” The menu represents the bike concept which choices like, The Tricycle and The Kickstand, which are the most popular sandwiches.
Josh mentions, “The bistro has a much bigger kitchen and prep area, along with a grill area outside, that don’t exist at LuLu’s. We take full advantage of this wonderful space.” The bistro prepares chef-inspired sauces in-house and has a grab-and-go section for those in a hurry. It opened mid-January on the first floor of the new Tanner Health Pavilion. Soon a pharmacy will open directly across the hall from the bistro. Josh says, “We designed the space for the bistro with Tanner, and it was made to go with the aesthetics of the building. I’m very thankful for the partnership with Tanner.”
Josh’s other restaurant LuLu’s, located inside Tanner Medical Center, will soon celebrate three years inside the main hospital across the street. Many in the community know Josh for his continuous dedication to give back. Each year Josh and his team provide Thanksgiving and Christmas meals at the Carroll County Soup Kitchen.
Blue Bike Bistro is open Monday through Friday from 11:00 a.m. to 4:00 p.m. and will start opening for breakfast soon. It is located at 706 Dixie Street in Carrollton, Georgia. To view the entire menu and for additional information, click here.
