Blue Bike Bistro, located at the Tanner Health Pavilion, is back open; and owner Josh McCorsley and staff are ready to whip up their curated sandwiches, salads, and wraps to serve the residents and visitors of Carrollton. Opening nearly a year ago, Blue Bike was forced to shut down in March amidst the COVID-19 pandemic.
With its convenient access for bikers and pedestrians from the Carrollton Greenbelt, the bistro will offer even easier access from the newly constructed parking deck and covered walkway next to the Tanner Health Pavilion which was completed on November 2, 2020. McCorsley adds, “The walk all the way through the pavilion was actually quite a long walk. This new parking area changes all that.” Soon to be added are express parking spaces for customers.
Blue Bike is bringing back all their made-from-scratch dishes with many locally sourced ingredients. Fan favorites such as “The Wheelie,” a smoked turkey and ham sandwich, and “The Kickstand,” a chicken salad sandwich, all made their return on October 6.
The bistro has state-of-the-art kitchen equipment, including Big Green Egg smokers for days when they offer grill specials. Tremendously popular, “custom burger Friday” gives guests the opportunity to choose from a variety of toppings and ingredients to go on their burgers.
Blue Bike also offers other types of barbecue and choice smoked meats. “I’m actually preparing to smoke about 100 pork butts to get ready to serve,” said McCorsley at the time of the interview. McCorsley and his team served numerous power crews during and after the height of Hurricane Zeta.
