Tilly’s Smokehouse Prepares to Launch in Carrollton

Tilly’s Smokehouse, a new barbecue restaurant, is opening soon on Bankhead Highway in Carrollton, in the former Dyson’s location. The restaurant is owned by Rhett Hayes and his wife Payton. Rhett, a Carrollton native has roots in the local food industry. Named after his daughter, Tilly’s Smokehouse will offer a menu centered around classic barbecue dishes and Southern sides.

The menu will feature items like ribs, chicken, pulled pork sandwiches, smoked cabbage, and mac and cheese. Rhett also plans to include a few specialty items such as barbecue quesadillas and peach cobbler egg rolls. While the full menu is still being finalized, these items will be part of the regular offerings.

The restaurant will provide several dining options, including indoor seating, a drive-thru, and a front patio. Although there is a bar area inside, there won’t be full bar service. Beer and wine will be available, but liquor will not be served.

This is Rhett’s first time owning a restaurant, though he has several years of experience working in a local barbecue kitchen. After stepping away from the food industry for a time, he’s returning to pursue a longtime goal of owning his own place.
