Rustic Southern Food, Brown Dog Eatery Expected To Open This Month, Now Hiring

The first restaurant in Carrollton’s newest mixed-use development, Hudson Mill, is set to open this month. Brown Dog Eatery is a rustic southern food experience unlike anything that Carrollton has seen. The restaurant will encompass the whole Southeastern region of the United States and use food from between Charleston and New Orleans for their dishes. The all-wood grill is surrounded by locally sourced hickory and oak on which the ground-in-house, certified angus burgers will be prepared along with many other menu options. Their famous Charleston complement is a sandwich called Apple Butter Jeans. You will find warm melted brie, sliced Granny Smith apples, local apple butter, arugula, smoked turkey, honey ham, and applewood-smoked bacon, on a pressed baguette. Don’t forget a cup of She Crab Soup, with sherry & crab roe! Ready for a delicious taste from Louisiana? Try the wood-fried, Louisiana Voodoo-rubbed shrimp with Edisto Island heirloom Geechee Boy grits stone-ground grits, grilled sausages, Creole tomato, au jus, bacon, and wood-grilled bread! Lunch price points are between $6-$14, and dinner is between $9-$28.

Building out Brown Dog Eatery was an enormous undertaking, which includes using original materials from the former textile mill. For example, all of the tin surrounding the bar is tin from the old barn, which is as old as the building, and the mill’s floor was kept and repaired. Brown Dog Eatery, Incorporated, credits Lamon Luther out of Villa Rica for the wooden bar, benches, and tables along with Carrollton’s first 10-person community table. Alex Labbe, who owns Labbe’s Woodwork did the hostess stand and all of the High Top tables in Brown Dog Eatery and the tables in another Carrollton restauarant, City Tavern.

The restaurant is currently hiring ALL positions. A sous chef is needed, along with line cooks, dishwashers, and bartenders. Kitchen experience is preferred. This is a fast-paced environment where dishes are cooked to order in a rustic southern atmosphere. Brown Dog Eatery offers very competitive wages and is owner-operated.
