A new sweet addition is on the way to Griffin, as plans show Nothing Bundt Cakes preparing to start construction in Spalding Village at 1423 North Expressway, Suite 125. The space was previously occupied by T-Mobile and sits on the Hobby Lobby and Goodwill side of the shopping center.
Construction documents indicate the project will involve a full interior buildout of approximately 1,977 square feet, transforming the former retail space into a bakery with a lobby, sales area, kitchen, and storage . The project falls under a mercantile classification and includes updated systems, fixtures, and finishes to support food service operations.
Spalding Village itself saw a major change in 2025 when the shopping center was sold as part of a full cycle investment deal. The transaction reflects continued interest in the Griffin retail corridor and signals ongoing momentum for new tenants and redevelopment.
