Chef Joe Collins will be opening a new spot for folks to dine in Villa Rica, Georgia. The chef has an illustrious background in the culinary arts. His mom baked desserts, and his dad provided meat for the family that he also cooked. When the chef lost his dad in 2006, he wanted to find something he could be good at outside of music. After attending a culinary school in Memphis, the Tennessee chef said, “I found a new love and passion for cooking and serving great food and dishes to great people. I graduated in 2011 and finished in Madrid, Spain.”
The restaurant will feature Memphis-style BBQ ribs, rib tips, smoked sausage, smoked chicken, and dirty rice. To add to the yumminess there will be smoked veggies, baked beans, coleslaw, and the restaurant’s famous gold-dusted smoked turkey. Chef disclosed they will also offer “Gold Dust Seasoning.” And with Villa Rica’s gold rush history, the seasoning should be a hit with diners. In addition to the already impressive menu Collin’s Family Food N BBQ will also serve gold-dusted Cajun smoked turkey legs.
Although the chef is not a native Georgian, he has worked in this area for twenty years. He and his family hope to bring a beacon of light, fellowship with God, and music to the community and the new place they now call home. When asked if the ingredients of the barbeque sauce were a secret, he answered, “Do it with love, every time.” Although they have a great staff, he will be looking for more after they are open.The Collins family is targeting the middle of October for a soft opening.
